Welcome to August 1, the start of my birthday month! My birthday is August 7 so I say it starts August 1 and I feel like that’s close enough. But I like to drag it out, too, because, um…hello, I’m worth more than a day anyway.
I woke up happy, despite the rain, this morning. But it wasn’t long after being at work that my little workgroup got some unfortunate news and it sent me spiraling into despair and feeling the stress that has been work for a couple of weeks now. All I want to do is cry. And hug my fella. I totally failed at lunch with eating as in, I didn’t go get food and snacked out of my drawer (BAD IDEA). But I’m trying to buck up because I have to since I’m a professional and all and I have to interact and lead a meeting later this afternoon. I’m looking forward to a workout this evening and I’m so happy that my fella has agreed to come see me tonight so I can hug him. And I’ll eat something healthy tonight instead of letting my pity party continue. So August 2 should start better. I’ll wake up next to my favorite person, I’ll go to spin, I will have a fantastic training session, and I WILL have a good day at work tomorrow. Then it’ll be time to weekend party. Ain’t no party like a low-key weekend party!
Well, I had a longer night away from my house and laptop than expected so I only have my breakfast, lunch, and afternoon snack to show you. I ate my dinner before taking a picture because blogging wasn’t the focus of my meal tonight…a friend in need was. Life happens, right?
I had Dunkin Donuts for breakfast, Panera for lunch, Nilla Wafers for a snack, and Baja Fresh for dinner.
Pretend I didn’t scarf down the mac and cheese from Panera before I remembered I was supposed to take a picture. I know mac and cheese from there is a lot of calories and WW points but some days, you just need it. Not my best day overall, but I had a good Curves workout followed by a fun Zumba workout and I feel good about the day.
Good Monday morning, y’all! I hope you all had nice weekends and are ready to get the week started! Even if you’re only ready to start the week to get to the next weekend. I have to say I’m kind of glad to float through the week since the last 2 have been so busy, this one will seem like a cake walk.
If you’ve got some leftover chicken from the weekend or have some chicken hanging around in your fridge/freezer that you’re not sure what to do with…why not turn it into chicken salad? I will sometimes buy a rotisserie chicken and pull the meat off that for chicken salad. Sometimes I use leftover chicken from a meal for chicken salad, and sometimes I just cook chicken with the soul purpose of making it into chicken salad. That’s what I did last week. Last Sunday I grilled off some chicken tenders with just salt and pepper. Once they were cool, I cubed them up. You can cut your chicken however makes you happy but I find the cubes work best for how I make my chicken salad because everything in it is about the same size. I usually just throw stuff together when it comes to my chicken salads, but last week I made a point to measure so I’m basing the recipe below off that. I’ll also add that this recipe fed my roommate and I for lunch every day last week.
8-10 boneless, skinless chicken tenders, cooked and cubed
2 c red seedless grapes, halved
1 c celery, diced
1/2 c green onions, diced
1 to 1 1/2 c mayonnaise with olive oil (the olive oil gives it a richer taste but you can use whatever you have on hand)
salt and pepper to taste
After cubing the chicken, halving the grapes, and dicing the celery and green onions, toss them all in a bowl and mix thoroughly. Stir in mayonnaise until all ingredients are coated. I would suggest adding the mayonnaise little by little so you get the right “wetness.” You can always add more, but you can’t take it out. Add salt and pepper as needed.
The green onions will add a nice bite and tang to the salad while the grapes add a nice burst of sweetness. I know some people don’t like grapes in their chicken salad but I highly recommend you try it if you haven’t before. You may surprise yourself.
What kind of things do you like in your chicken salad? I also like pecans in my chicken salad but if I’m planning to eat it mostly with crackers, I will keep those out. I usually just add those on top if I’m eating the chicken salad on a bed of greens.
Yesterday my cowoker wanted to go to the World of Coke. I hadn’t been in years so I was game. We drove downtown and spent a couple of hours wandering around and tasting Coke products from around the world. Afterwards we stopped at Chick-fil-A for a quick lunch before having to get back to the hotel. I’ll tell ya, even though I’ve been able to buy Chick-fil-A every place I’ve lived..it always tastes the best in Georgia. Maybe it’s psychological, but whatever it is…it’s always better. After doing the work we came to do last night we headed to Fellini’s for dinner. Fellini’s is my favorite Atlanta pizza joint and it didn’t disappoint last night. The weather has been fantastic here the past couple of days with low humidity so we ate outside on the patio. Ending an evening with pizza and beer makes for a good evening. After I got to the hotel last night I was trying to solve my dilemma of what to do with my commemorative (free) Coke bottle from World of Coke. It’s an 8oz. glass bottle and I’m not checking bags today. But I didn’t know how to get the darn thing open since I didn’t have a bottle opener. Well, I have this handy little keychain:
No, it’s not an official bottle opener but it certainly did the trick. I sipped on my Coke last night before heading to bed. So Nine West saved the day and gave me the ability to enjoy a Coke in it’s best package. Glass bottle Cokes are truly the best kind of Cokes.
This morning I woke up with the intention to work out to a WATP 5 mile DVD. Except, I forgot my tennis shoes. I thought I could do it anyway, even though that’s not a smart idea. Well, I made it through the first mile but as the speed picked up I got really concerned I was going to hurt myself and the soles of my feet were starting to hurt from the friction of the carpet. So I gave up. I’m disappointed in myself because I feel like every time I’ve tried to do straight cardio lately I’ve been failing. Maybe my workout style is changing but it’s really really frustrating. I gave up on gym cardio equipment like treadmills and ellipticals long ago because I don’t last 5 minutes on those things. I get bored with walks unless I’m walking with someone and there are hills to challenge me. I’m just frustrated by it all. I know I need cardio to lose weight but I can’t find what I like.

I thought the lunch I left in the work fridge over the weekend would make it until today but it didn’t. So I decided I would go to Starbucks and try another one of their Bistro Boxes. This time I tried the Chicken and Hummus Bistro Box.
It definitely was refreshing and gave me some energy. The chicken was so flavorful and moist. The chicken had a rotissere flavor to them. I could’ve eaten twice what was provided. Plus it was easy to eat back at my desk with a bottle of water.
But I also wanted something sweet and not as good for me. Enter the Mocha Coconut Frap:
But it was delicious. Really delicious. It was a perfect cool treat that tasted like a Girl Scout cookie. A Somoa to be exact. Yum!
Don’t worry, there’s gym time planned for later. Besides I ate carrots so it all balances out, right?
What’s your favorite lunch to eat while you work? Even if you don’t have an office job like me, we’ve all had to eat while working on something. So tell me about it. My favorite office lunch is actually probably just a peanut butter and jelly sandwich. Then I snack on veggies and fruit for a hour after eating that.
When I got back last night I had a coupon for a free (birthday) Starbucks drink in my mailbox. So I decided I’d cash that in at lunch today. But I also decided to try one of their “new” bistro boxes. I went with the Chipotle Chicken Wrap box.
It includes 3 whole wheat tortillas, seasoned chicken strips (thin cut!), pepper jack cheese, lettuce, lime-cilantro slaw and tomato avocado salsa. It also comes with a small square of dark chocolate. I loved this box! It was so flavorful and didn’t taste stale in the slightest. The salsa was amazing since it had chunks of avocado. The slaw was also quite fresh and added a nice cool crunch to the wrap. They don’t wrap up so well as much as they’re like tacos. But that’s a good thing because it means there is a lot of filling for those tortillas. The dark chocolate square was also a perfect cap to the box. I often want something sweet when I eat anything with salsa or tomatoes (that aren’t in a sandwich) during a meal. So this was a perfect ending.
And with stats like these you can’t beat it.
All of their boxes are less than 500 calories with most being under 400. I’ll definitely be buying this box again and trying the others.
Sunday I made shrimp salad. I realized too late in the process I never bought mayo after tossing what I had from my old fridge during the move. I was “clever” and mixed nonfat plain yogurt with some mustard. Sunday this was fantastic. Today? Not so much. When I went into the container this morning the yogurt had separated as it tends to do. I worked around that and brought some for lunch anyway. Turns out that was not a great idea. It just wasn’t appetizing to me. Luckily the deli downstairs can make a mean grilled cheese sandwich, although not much else is great there. I found a bag of these in the kitcheninviting people to take one. So I did, for later.
So back to my failed attempt at shrimp salad substituting. Have you ever substituted yogurt for mayo? Did it work or not? What’s the secret to it not being gross a few days later?
Now that my shrimp salad won’t do, I need dinner ideas. What are you having for lunch or dinner?
I didn’t think Friday would ever get here this week! Not only because, well, it’s Friday, but it’s also the day Verizon was coming to install my cable and internet! I woke up so excited you would’ve thought it was Christmas morning.

Anyway, this morning before I logged in to start working I drank coffee and had breakfast while perusing a magazine. After staring into my empty fridge I came up with a simple breakfast.
Seriously, y’all, it’s an amazing combination. The Laughing Cow cheese is way better than any ol’ cream cheese (and it’s lighter).
After Verizon came and went, I ran out to drop my old Comcast equipment off and stopped by Chick-fil-A for lunch. I had a hankering and nothing would do if I didn’t get my fix.
A little more work and then Curves tonight. Then it’s officially my weekend. I have a whole weekend with nothing to do. I don’t have to move, I don’t have to work. I can just play and do whatever I want. But I can say, baking will be involved.
This morning started a little earlier than normal as I had to be downtown for a 9:30am meeting. So I started with a Starbucks but no breakfast. It turned out ok though because the steamed milk kept me full until 11ish. For lunch I had sushi, which was awesome. There’s a great sushi buffet near work so you pay $12 and have all you can eat sushi. This is ideal because you get to choose from a wide variety of rolls plus they have a hot buffet, which usually has good miso soup and green veggies. It is too hot for soup but I did get half a plate of green beans. Then I loaded up on sushi.

I’m going to do a full post on it later but if you can tell from the picture there are different colored highlights on my planner. I sat down and planned out my workouts through June and then on my full calendar page I used some highlighting to pull out the fun or important things so they don’t get lost among the boring stuff, like meetings.
