What I Love Wednesday: Pumpkin Carrot Muffins

Yesterday I made some healthy muffins. Healthy muffins that are also tasty that is.

Pumpkin Carrot Muffins

Ingredients
1/2 c pure pumpkin
1/3 c brown sugar
2 Tbsp oil
1 egg
1/2 c grated carrots (I grate them fine so they bake in better)
3/4 cup whole what flour
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp baking soda
1 tsp baking powder

Directions:
Preheat oven to 375 degrees.
Beat together pumpkin, brown sugar, oil and egg.  Add in carrots.
In a separate bowl, blend together flour, salt, baking soda, baking powder, and cinnamon.  Add to the pumpkin mixture.
Fill muffin tins about 2/3 full.  Bake for 10-12 minutes.

Yields 9 muffins.
