Last week I made a delicious salmon recipe. Not only was it delicious but it was one of the simplest dishes I’ve ever made.
Cilantro Lime Salmon
1/2 bunch of cilantro, stems removed
2 tsp minced garlic
1 Tbsp lime juice
2 Tbsp olive oil, separated
salt and pepper to taste
3 small salmon filets
Preheat oven to 425 degrees. Grease pan with 1 Tbsp of olive oil. Place salmon filets on pan.
Place cilantro, garlic, lime juice, 1 Tbsp of olive oil, and salt and pepper in a food processor or blender. Blend until creamy. Brush cilantro sauce over salmon filets until well coated.
Bake for 12-15 minutes, flipping once halfway through, until cooked through.
I’d suggest serving with a cilantro rice or garlic spinach.
