Crunchy Chicken Fingers with a Kick
~1 lb. boneless, skinless chicken tenders
1/2 c skim milk
1/2 c Egg Beaters (or two eggs)
1 c panko bread crumbs
1 c cornflake crumbs
1/2 c whole wheat flour
1 tsp paprika
1 1/2 tsp cayenne
1/2 tsp cumin
1/2 tsp chili powder
1 tsp sea salt
1 tsp pepper
Preheat oven to 450.
Mix egg, milk, paprika, cayenne, and cumin. Soak chicken in egg mixture.
Lay a wire rack on a baking sheet and spray it with non-stick spray. In a shallow bowl, mix flour, panko, corn flake crumbs, chili powder, and salt and pepper. Dip the chicken tender in the panko mix and coat thoroughly, then lay on the baking sheet. Repeat with remaining chicken.
Spray each chicken piece lightly with cooking spray and bake for 12 minutes. Flip them and bake for another 12 minutes. Let cool slightly before trying to take them up.
