This is a favorite comfort food of mine, Pumpkin Sausage Bake. It sounds a little weird but I highly recommend it.
Pumpkin Pasta Bake
1 box pasta (cooked)
1 lb ground sausage
1 Tbsp minced garlic
1 jar marinara sauce (your favorite)
1 can pumpkin puree
1/2 c water or white wine
2 Tbsp shredded Parmesan cheese
4 oz. shredded mozzarella
Preheat oven to 375 degrees.
Cook sausage in large saucepan until cooked through. Add garlic and cook one minute. Stir in marinara sauce. Place water/wine in marinara jar and cover. Shake and pour into saucepan. Add pumpkin and Parmesan cheese. Stir and cook until well combined. Stir mixture into prepared pasta. Put into large, greased baking pan. Top with mozzarella cheese and cover. Bake for 15 minutes. Remove cover and cook another 5 minutes.
