Do I have a side dish for you to try! I made it last night for dinner and it was a winner! It’s like a healthy creamed spinach.
Garlic Parmesan Spinach
12 oz. Baby Spinach (I used a family size bag of Dole Baby Spinach)
1.5 Tbsp olive oil
1 Tbsp minced garlic
sea salt to taste (I used about 1/2 tsp)
1/4 c grated Parmesan cheese
Heat olive oil in large skillet. Add spinach in batches, letting each batch cook down slightly before adding more. Once you have all the spinach in the pan, add garlic and sea salt. Cover with lid and let it continue to cook 5-6 minutes. Remove lid and stir the cheese into the spinach until melted.
That’s it. Really. It tastes like creamed spinach but not so creamy and way healthier for you. It’ll look like a lot of spinach when you start, but it cooks down a lot.
