These are very moist and not too sweet. You’ll likely need milk with them. They don’t look pretty but they taste good. But I don’t think anyone expects “mud cups” to look pretty, right?
South Georgia Mud Cups
- 1 box chocolate cake mix
- 1 can pumpkin
- 1 egg
- 1/3 c sugar
- 8 oz. block cream cheese, softened
- 1 c mini chocolate chips
Preheat oven to the temperature on the back of the cake mix box. Mix cake mix and pumpkin until well blended. The batter will be thick. Spoon cake batter in individual cups. You want the bottom of the cups to be covered but not more than 1/2 full.
Mix cream cheese, egg, and sugar together until well blended. Stir in chocolate chips. Spoon about 1 tsp of the cream mixture on top of each cup of batter. Spoon the remaining batter on top of the cream mixture. Bake 18-20 minutes.
