South Georgia Mud Cups

South Georgia Mud Cups

These are very moist and not too sweet. You’ll likely need milk with them. They don’t look pretty but they taste good. But I don’t think anyone expects “mud cups” to look pretty, right?

South Georgia Mud Cups

  • 1 box chocolate cake mix
  • 1 can pumpkin
  • 1 egg
  • 1/3 c sugar
  • 8 oz. block cream cheese, softened
  • 1 c mini chocolate chips

Preheat oven to the temperature on the back of the cake mix box. Mix cake mix and pumpkin until well blended. The batter will be thick. Spoon cake batter in individual cups. You want the bottom of the cups to be covered but not more than 1/2 full.

Mix cream cheese, egg, and sugar together until well blended. Stir in chocolate chips. Spoon about 1 tsp of the cream mixture on top of each cup of batter. Spoon the remaining batter on top of the cream mixture. Bake 18-20 minutes.

The cups will look like this:

Enjoy!

  1. I am always looking for uses for pumpkin because my students run a snack stand at a pumpkin patch all weekends in October. We do the pumpkin cream cheese muffins and pumpkin mousse…..but nothing chocolate. I am gonna try these. The kids will like them no doubt. Sounds easy too, which we need sometimes (:
thanks for subscribing to my blog. Having fun!

    1. It’s a very easy recipe and kid friendly! You can also use the pumpkin and cake mix and use the batter to make cookies. I really like using spice cake mix for that. Enjoy!
