I intended to eat shrimp salad tonight but this afternoon I decided I wanted a hot meal..but I wanted it to be quick and somewhat experimental. Unfortunately for you (but fortunately for me) it was so delicious I ate it before it even crossed my mind to take a picture. But this was my inspiration:
I paired my tomatoes and zucchini with some turkey meatballs. Classy, I know, but it was delicious.
Cheesy Baked Tomatoes and Zucchini
1 large tomato
1 small zucchini
1/4 tsp Rosemary and Sage Sea Salt (or you’ll need salt and some Italian herbs)
1/4 c Italian Blend shredded cheese
handful of panko or seasoned breadcrumbs
olive oil spray
Preheat the oven to 350 degrees. Cover a baking sheet with tin foil and spray with olive oil spray. Slice ends off of tomato and then cut in half so you have two thick slices. Slice zucchini into 1/2″ rounds. Place tomato and zucchini in a single layer on baking sheet. Sprinkle tomatoes and zucchini with seasoned sea salt. Sprinkle cheese evenly over vegetables then top with panko or breadcrumbs. Bake 10-15 minutes.
This was such a quick and easy dinner and the flavors were amazing.
